I have had many electric skillets over the years that needed replacement every 3 - 4 years. We exhaust an electric skillet for everything from pancakes to pot roast to stuffed peppers. When I saw this pan, I opinion "Why not? I have already spent hundreds of dollars on the cheaper ones." Well, this is the sturdiest, best built, biggest skillet ever. No sticking, burning, easy to well-organized. The only quandary is the handle on the lid gets hot so consume a hot pad to capture it.
I bought this skillet from a Williams Sonoma retail store on 10/10/08 and returned it on 10/11. They are a very nice store to deal with on products and common the return without predicament. I subsequently found that there are other write-ups on this skillet on their spot where it is not rated highly. I found the criticisms are objective. There is a hot position in the middle. The cooking is not even. A actual test for a stainless steel skillet is cooking eggs and pancakes because the temperature must be kept at about 350 so the food sears quick. The food basically tells you when it is ready to be turned when it releases easily with a spatula. However, even with a lot of grease (from the bacon), food sticks in this skillet. The corners are the coolest and the liquid runs to the corners leaving the middle exposed. Why did the food stick? Because of quality control issues, the temperature control allowed remarkable too wide temperature swings. For example, when the controller was site to 350, the bacon would cook and sizzle. When the unit shut off, the bacon would no longer sizzle and would fair sit there in the pan. Cooking stopped. To fetch the controller to turn the element serve on, I had to turn the dial to the "sear" setting which is about all the diagram up. This was a temperature swing of several hundred degrees. I paid $239 plus tax. This made this an expensive electric skillet which had too many shortcomings to have been acceptable at any imprint.
Perfect for a family because it holds enough food to beget a fine size meal for a family of seven. It is fairly easy to natty. I would buy the lid to be more tightly fitting, but it doesn't affect the cooking.
